Well, it would be. Most store bought honey is a sort of pasturized generic blended stuff. Honey from the hive can be mostly from a single source, depending on what crop is in - clover, say, or apple blossom. Even if it's from multiple sources, it's much more complex, because, like Holmes saw, the individual "notes" can be distinguished.

I still think this is lovely!
